Ingredients

  • 2 lbs ground beef
  • 1 29 ounce can tomato sauce
  • 1 29 ounce can kidney beans, drained
  • 1 29 ounce can pinto beans, drained
  • 2 14.5 ounce cans diced tomatoes, not drained
  • 1 yellow onion (diced)
  • 3 ribs celery (chopped)
  • 1 green bell pepper (chopped)
  • 1 tablespoon cumin powder
  • 1/4 cup chili powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 Tablespoon sugar
  • 2 cups beef broth*

Instructions

  • 1. Brown the ground beef well in a large skillet. Drain off any excess fat thoroughly, then transfer the browned ground beef to a 6 quart or larger slow cooker.
  • 2. Add the remaining ingredients (tomato sauce, kidney beans, pinto beans, diced tomatoes, onion, celery, bell pepper, cumin, chili powder, black pepper, salt, sugar, and beef broth) to the slow cooker with the ground beef. Stir all ingredients together very well to combine them evenly. Cover the slow cooker with its lid.
  • 3. Cook the chili on the LOW setting for 8-10 hours, allowing the flavors to fully meld and deepen. Alternatively, for a quicker cook time, set your slow cooker to HIGH and cook for 4-6 hours, or until the chili is thoroughly heated through and vegetables are tender. Stir occasionally if desired, but it’s not strictly necessary.

1. For the beef broth, you may substitute 2 beef bouillon cubes dissolved in 2 cups of hot water if you don’t have liquid beef broth on hand. This is a convenient alternative that still provides rich beefy flavor.
