Ingredients

  • 1 cup salted butter (softened to room temperature)
  • 2 1/2 cups all purpose unbleached flour
  • 2 cups light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 3 cups quick cook rolled oats
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 14 oz can sweetened condensed milk
  • 2 tablespoons salted butter
  • 2 teaspoons vanilla extract

Instructions

  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Line a 15 x 10 x 1-inch baking sheet with heavy-duty foil, ensuring there’s an overhang on the sides for easy lifting later.
  • In a large mixing bowl, beat the one cup of softened salted butter until it’s light and fluffy. Gradually add in half of the all-purpose flour. Then, incorporate the light brown sugar, large eggs, 2 teaspoons of vanilla extract, and the baking soda. Continue to beat the mixture until it’s well combined, stopping to scrape down the sides of the bowl as needed to ensure everything is incorporated. Once thoroughly mixed, add in the remaining flour and stir well. Finally, add the quick cook rolled oats and stir again until just combined. This dough will be quite stiff, which is normal. Set this mixture aside.
  • For the luscious chocolate filling, combine the semi-sweet chocolate chips, the can of sweetened condensed milk, and 2 tablespoons of salted butter in a small saucepan. Heat this mixture over low heat, stirring often to prevent scorching, until all the chocolate chips are completely melted and the mixture is smooth and glossy. Remove the saucepan from the heat immediately and stir in the remaining 2 teaspoons of vanilla extract.
  • Take approximately 3 1/2 cups of the prepared oatmeal dough and press it evenly into the bottom of your foil-lined baking sheet. This forms your bottom crust. Next, carefully pour the warm chocolate filling over this crust, spreading it evenly almost to each edge of the pan. Finally, drop the remaining oatmeal dough by teaspoonfuls over the top of the chocolate layer, scattering it to create a delightful crumbly topping.
  • Bake in the preheated oven at 350 degrees Fahrenheit (175 degrees Celsius) for about 25 minutes, or until the dropped dough on top is lightly browned and crispy. (The chocolate layer underneath will still look a little moist and soft in the center; it will set as it cools, so avoid overbaking.) Allow the bars to cool completely in the pan on a wire rack. Once fully cooled, remove them from the pan by gently pulling up the foil edges. Cut into individual bars and store them in an airtight container in the fridge for optimal freshness and a perfectly fudgy texture.
